About this work
West Village alley bakery. Two a.m., first proof. Camille is twenty-nine, a married baker. Flour sits in her chestnut hair, the white tank is sweat-soaked, the apron strings come undone. She doesn't take the gold ring off even to knead. He's at the Hunts Point wholesale market.
She leaves the intern the first proof. Close the proofing-room door and only the oven timer is left. Fold the apron and walk out and that night is a shift. Close the door and the bakery stops being work.
